Chocolatey Chocolate Chip Cookies

These are not candida-friendly, but healthy in every other way! They are gluten free, dairy free, nut free, and low glycemic.

Makes ~ 12-18 cookies

  • 1-15oz can black beans, drained and rinsed

  • 2 eggs

  • 4 tablespoons unrefined coconut oil

  • 1 tablespoon pure vanilla extract

  • 1/2 cup coconut sugar

  • ¼ teaspoon baking soda

  • ¼ teaspoon sea salt

  • ¼ cup unsweetened raw cacao powder

  • 2 ounces 85% dark chocolate, melted in a double pan

  • 4 ounces dark chocolate chips, soy free, dairy free (if necessary)

Instructions

  1. Preheat oven to 375 degrees.

  2. In a blender or food processor, add the beans, eggs, oil, and vanilla. Blend until smooth.

  3. Add the sugar, baking soda, sea salt and pulse until well mixed.

  4. Add the cacao powder and dark chocolate and pulse a few times.

  5. Remove from the blender and stir in chocolate chips.

  6. Place a piece of parchment paper on a pan and drop spoonfuls of batter on the pan.

  7. Bake for 15 to 20 minutes.

  8. Cool and enjoy!
