Apple Cinnamon Muffins
Makes 12 muffins
3 large green apples, diced small
3 tablespoons water
9 eggs, divided
3 tablespoons canned coconut milk (I recommend Native Forest brand)
1 ½ coconut oil, melted
1 teaspoon cinnamon
1 teaspoon powdered stevia (I recommend Stevita Supreme)
2 tablespoons coconut flour
½ teaspoon baking soda
¼ teaspoon sea salt
Preheat oven to 350 degrees.
Oil a muffin pan with coconut oil or prepare with liners.
Heat a large skillet on medium high heat.
Add apples and water, and cover.
Cook apples until softened. Set aside.
In a medium-sized bowl, whisk eggs.
Add remaining ingredients and mix well.
Add apples and combine.
Divide batter between muffin cups.
Bake for 40 minutes or until muffins are firm.
