Berry Cobbler

Makes 6 servings

  • 4 cups fresh blackberries, raspberries, blueberries or strawberries, rinsed

  • ½ cup coconut flour

  • ½ cup almond meal

  • ¾ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 teaspoon cinnamon

  • 1 teaspoon ginger

  • ¼ teaspoon nutmeg

  • 3 eggs

  • 1 cup coconut milk

  • 1 teaspoon pure vanilla extract

  • 1 teaspoon lemon juice

  • 1 teaspoon powdered stevia (I prefer Stevita xylitol/stevia blend)

 Instructions

  1. Preheat oven to 325 degrees

  2. Grease an 8x8 glass baking dish with coconut oil

  3. Arrange the berries in the baking dish

  4. Combine all the remaining ingredients and mix well until a smooth batter forms

  5. Pour the batter over the berries and smooth out with a spatula

  6. Bake for 35-45 minutes or until the batter is firm to touch
