Makes 2 cups
1 avocado, seeded
½ cup mayonnaise (see recipe for homemade mayo)
½ cup full fat coconut milk
1 tablespoon lemon juice, or coconut vinegar
2 cloves garlic
1 sprig green onion
2 tablespoons fresh cilantro
2 tablespoons fresh parsley
1 tablespoon fresh dill, or 1 teaspoon dried dill
½ teaspoon salt
½ teaspoon pepper
Instructions
Mix all ingredients in a blender
Blend well and store extra in the refrigerator
