Cruciferous Cocktail Salad

Makes 4 servings

  • 2 small heads of broccoli, lightly steamed and chopped

  • 2 stems of fresh kale, chopped

  • 1 cup green cabbage, shredded

  • 1 red pepper, diced

  • ½ cup sunflower seeds

  • ½ cup red onions, diced

  • ½ cup homemade mayonnaise

  • ¼ cup avocado oil

  • 2 green apples, cored

  • 2-3 tablespoons raw, apple cider vinegar

 Instructions

  1. Combine broccoli, kale, cabbage, red pepper, and red onions in a large bowl

  2. Blend mayonnaise, oil, apples, and vinegar in a blender until well combined

  3. Pour dressing over the vegetables and serve.
