Sweet Fennel Cabbage Salad

Makes 4 servings

  • ½ head of cabbage, shredded

  • 1 red pepper, diced

  • 1 green apple, diced

  • 1 (15.5 ounce) can full fat coconut milk

  • juice of ½ lemon, squeezed

  • 20 drops of clear stevia

  • ½ teaspoon nutmeg

  • ½ teaspoon cinnamon

  • ½ teaspoon salt

  • ½ cup of fresh fennel tops


  1. Combine cabbage, red pepper, and green apple in a large bowl

  2. Place remaining ingredients in a blender and mix well

  3. Pour dressing over cabbage and toss.
