Makes 12 muffins
1 tablespoon coconut oil
12 eggs
½ pound sausage, bacon, or leftover meat, cooked and diced
2 cups veggies, diced (any combination)
¼ teaspoon sea salt
1/8 teaspoon black pepper
3 tablespoons water
Instructions
Preheat oven to 350 degrees
Oil each muffin cup with coconut oil or line with paper
Whisk eggs in a medium bowl.
Add remaining ingredients and mix well.
Divide batter between muffin cups.
Bake for 20 minutes or until middle is firm.
Note: These muffins freeze and reheat very well for a quick breakfast or snack. Additional seasonings can be added for variety and flavor.
