Makes 4 servings
1 pound grass-fed beef
1 teaspoon chili powder or chipotle powder
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon oregano
½ teaspoon basil
1 tablespoon coconut oil
1 onion, roughly chopped
8 carrots, roughly chopped
1 head cauliflower, steamed and roughly chopped
1 (12 ounce) package kelp noodles (optional)
Instructions
Brown the beef in a medium skillet, on medium heat
Add all seasonings and ¼ cup water, if meat is dry
Turn off heat and set meat aside
In a large skillet, sauté carrot and onion in coconut oil, on medium heat
On a plate, layer cauliflower, kelp noodles, carrot/onion mixture and beef.
Note: Hobos can be precooked and preassembled in aluminum foil, and placed on a grill or campfire to reheat.
