Refreshing Power Greens Salad

Makes 4 servings

  • 8 cups Power Greens (spinach, kale, swiss chard)

  • 2 cucumbers, sliced

  • 2 green apples, sliced

  • 1 avocado, chopped

  • 1 cup chopped pecans or walnuts

  • 1 cup extra virgin olive oil

  • 1/3 cup preservative-free lime or lemon juice

  • ½ teaspoon sea salt

  • 2 tablespoons fresh basil, or 2 teaspoons dried basil

  • ½ teaspoon powdered stevia


  1. Toss power greens, cucumber, apples, avocado and nuts together

  2. Blend remaining ingredients

  3. Pour dressing over salad
