Warm Chili Cabbage Slaw

Makes 4 servings

  • 2-3 tablespoons coconut oil

  • 5-6 cups green cabbage, shredded

  • 2 large green apples, diced

  • 1 green pepper, sliced

  • 1 handful fresh cilantro, chopped

  • 3/4 cup pumpkin seeds (pepitas)

  • 2 (15.5 ounce) cans no-sugar chili beans, drained, or self-prepared pinto beans

  • Salt, to taste

Instructions

  1. Heat coconut oil in a large skillet over medium heat

  2. Add all ingredients to the skillet and sauté lightly

  3. Serve warm
