Cauliflower "Rice"

Makes 4 servings

  • 1 head cauliflower, chopped into large pieces

  • 1-2 tablespoons coconut oil or clarified butter

  • sea salt, to taste

  • black pepper, to taste

Instructions

  1. Heat oil in a medium sized skillet on medium heat

  2. Using either a box grinder with larger holes or a food processor, grind cauliflower into small rice-sized pieces

  3. Add cauliflower to skillet and cook until softened

  4. Season with salt and pepper

Note: Various seasonings can be added to this recipe so the “rice” compliments your dish, including: oregano, basil, chili pepper, chipotle seasoning, curry, turmeric, cumin, onion and garlic powder.
