Chicken Curry Salad

Makes 4 servings

  • 1 pound chicken, cooked and shredded

  • 1 cup celery, diced

  • ½ red onion, diced

  • 1 cup green apple, diced

  • ½ cup chopped walnuts (or other nut)

  • 1 cup mayonnaise

  • 1 tablespoon curry powder

Instructions

  1. Blend mayonnaise and curry powder.

  2. Combine remaining ingredients in a large bowl.

  3. Stir in dressing and chill or serve immediately.
