One Pot Chicken Curry

Makes 8 servings

  • 1-2 pounds chicken breast, cooked and cut into 1 inch pieces

  • 2 (15.5 ounce) cans unsweetened coconut milk

  • 1-2 large tomatoes, diced

  • 1 (6 ounce) can tomato paste

  • 2 cups frozen peas

  • 1 cup cashews

  • 1 red bell pepper, chopped

  • 2 small onions, chopped and sautéed

  • 2 cloves garlic, minced and sautéed

  • 2 tablespoons coconut nectar

  • 2-3 tablespoons raw apple cider vinegar

  • 1 tablespoon curry powder

  • 1 teaspoon onion powder

  • 1 teaspoon black pepper

  • Salt, to taste

Instructions

  1. Combine all in a slow cooker and cook on high for 4 hours

Note: You can make this in a large skillet, as well. Sauté the chicken, followed by the onions and garlic. Add all other ingredients and cook on medium heat until thickened.
