Makes 8 servings
1-2 pounds chicken breast, cooked and cut into 1 inch pieces
2 (15.5 ounce) cans unsweetened coconut milk
1-2 large tomatoes, diced
1 (6 ounce) can tomato paste
2 cups frozen peas
1 cup cashews
1 red bell pepper, chopped
2 small onions, chopped and sautéed
2 cloves garlic, minced and sautéed
2 tablespoons coconut nectar
2-3 tablespoons raw apple cider vinegar
1 tablespoon curry powder
1 teaspoon onion powder
1 teaspoon black pepper
Salt, to taste
Instructions
Combine all in a slow cooker and cook on high for 4 hours
Note: You can make this in a large skillet, as well. Sauté the chicken, followed by the onions and garlic. Add all other ingredients and cook on medium heat until thickened.
