Makes 1 cup
2 egg yolks
1 tablespoon lemon juice
½ teaspoon sea salt
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground mustard seed
¼ teaspoon pepper
1 cup avocado oil or a similar light-tasting oil
Using a hand mixer or blender, whisk (or blend on low) egg yolks, lemon juice, and spices until almost fluffy
Slowly add oil a few drops at a time, whisking constantly. Slowly drizzle the oil into the mixture during the last ½ cup.
Store mayonnaise in the refrigerator
Note: You may make a spicier version by adding cayenne pepper, chili powder, cumin, turmeric or other spices to suite your taste. Replacing some oil with melted bacon fat provides another tasty option.
