Gut-Healing Mayonnaise

Makes 1 cup

  • 2 egg yolks

  • 1 tablespoon lemon juice

  • ½ teaspoon sea salt

  • ½ teaspoon onion powder

  • ½ teaspoon garlic powder

  • ½ teaspoon ground mustard seed

  • ¼ teaspoon pepper

  • 1 cup avocado oil or a similar light-tasting oil


  1. Using a hand mixer or blender, whisk (or blend on low) egg yolks, lemon juice, and spices until almost fluffy

  2. Slowly add oil a few drops at a time, whisking constantly. Slowly drizzle the oil into the mixture during the last ½ cup.

  3. Store mayonnaise in the refrigerator

Note: You may make a spicier version by adding cayenne pepper, chili powder, cumin, turmeric or other spices to suite your taste. Replacing some oil with melted bacon fat provides another tasty option.
