Paleo Pumpkin Pancakes

Makes 12-15 pancakes
1 cup canned pure pumpkin puree
2 teaspoons powdered stevia (I recommend Stevita Supreme)
2 teaspoons pure vanilla extract
2 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
1 ½ teaspoon baking soda
½ teaspoon sea salt
4 tablespoons coconut flour
4-5 tablespoons coconut oil
Whisk eggs in a medium bowl.
Add remaining ingredients and mix well.
Heat a large skillet on medium heat.
Add 2 tablespoons of coconut oil and spoon batter into skillet.
Flip each pancake when bubbles appear on the surface.
Add more coconut oil, as needed.
