Quinoa Bean Berry Salad

Makes 4 servings

  • 2 cups quinoa (see Baked Quinoa recipe)

  • 2 cups garbanzo beans (chickpeas), cooked and drained

  • 2 cups fresh berries (any assortment of blueberries, blackberries, raspberries)

  • 2 cups nuts or seeds (any assortment of pumpkin seeds, sliced almonds, cashews, pecans, walnuts, sunflower seeds)

  • 1 handful fresh dill, diced

  • 1 handful fresh parsley, diced

  • 1 cup extra virgin olive oil or avocado oil

  • ½ cup coconut vinegar or lemon juice

  • ½ teaspoon black pepper

  • ½ teaspoon sea salt

  • ½ teaspoon powdered stevia, or more to taste

  • 8 cups spinach

Instructions

  1. Combine quinoa, beans, berries, nuts or seeds, dill and parsley in a large bowl

  2. Mix olive oil, vinegar or lemon juice, black pepper, salt, and stevia in a blender

  3. Pour dressing over the salad and toss

  4. Serve on a bed of spinach
