Zucchini Noodles

Makes 2 servings

  • 1 large zucchini

Instructions to shape noodles

There are 2 ways to shape zucchini into noodles:

  1. Use a spiralizer to make noodles from the whole zucchini, or

  2. Use a vegetable peeler to peel zucchini into slices. Use a knife to slice peels lengthwise into noodle shapes

Zucchini noodles can be used raw, or you can cook them to soften.

Instructions to cook zucchini noodles

  1. Heat 1-2 teaspoons of olive oil or clarified butter in a skillet, over medium heat.

  2. Stir in zucchini noodles and cook for 1-2 minutes

  3. Add 2 tablespoons of water and cook until tender

  4. Drain excess liquid
