Makes 4 servings
4 fillets white fish (flounder, cod, trout, tilapia, etc)
1 egg
¼ teaspoon sea salt
¼ teaspoon black pepper
1 cups ground almonds (or almond meal)
¼ cup coconut flour
1 teaspoon lemon zest
2 tablespoons coconut oil or clarified butter
Instructions
Preheat oven to hi broil.
Whisk egg, salt, and pepper.
Combine almonds, coconut flour, and lemon zest in a shallow bowl.
Dip each fillet in egg mixture.
Press each side of the fillet into the almond mixture.
Place fillets in a glass baking dish.
Place a pat of coconut oil or clarified butter on top of each fillet.
Broil for 3-5 minutes or until fillet is done.
Note: If you have extra time, you can “fry” the fillets in a skillet with coconut oil. Any type of nut will work for this recipe. It is helpful to make a larger batch of the almond mixture and store in the freezer for future meals.
