Salmon Patties

Makes 5 patties

  • 2 tablespoons coconut oil

  • 1 (15ounce) can wild Alaskan salmon

  • 3 eggs

  • ¼ cup coconut flour

  • ½ cup spinach, kale or Swiss chard, finely diced

  • ½ tablespoon dried parsley or 1 tablespoon fresh parsley, diced

  • ½ teaspoon sea salt

  • ½ teaspoon pepper

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

Instructions

  1. Heat coconut oil in a large skillet on medium heat

  2. Combine remaining ingredients in a medium sized bowl

  3. Form patties and cook for 5 to 8 minutes on each side
